Among the many hats worn by Reef chef Bryan Caswell is his Congress of Chefs cap.
United Airlines’ Congress of Chefs are five celebrity chefs and a master sommelier who work with the airline’s team of executive chefs to shape United’s premium food and beverage offerings.
Other members of the Congress of Chefs include Houston’s Michael Cordua (Americas, Churrascos, Artista), James Canora of Delmonico’s (New York), Paul Minnillo of Flour (Cleveland), Roy Yamaguchi of Roy’s Restaurants and master of wine Doug Frost.
On Saturday, Caswell will be flying to Hong Kong as part of United’s “Chef Onboard” series. During the flight, Caswell will don his chef’s jacket and work with flight attendants as they execute his menu for the BusinessFirst customers. He’ll be hands on in the prep, as well as in the plating of the meal, a multi-course affair paced at about two hours.
Following the meal, Caswell will speak with passengers and crew to get their feedback.
