The Revival Market innovators created something pretty special when they opened their local produce and meat store in 2011. Now they’re ready to branch out with another concept – an Italian restaurant committed to seasonal and regional ingredients.

Coltivare, to open in spring 2013 only three blocks east of Revival Market, is envisioned as a neighborhood trattoria that will feature wine and a menu of wood-fired pizza, Revival salumi and cheese plates, pastas and roasts.

"Revival Market's philosophy and relationships with local farmers and purveyors of Texas beef, dairy and Gulf Coast seafood will underlie each dish on the menu, which will continue chef Pera's preference for family style dining," according to a press release from Revival Market.

Revival owners Ryan Pera and Morgan Weber announced their plans for Coltivare at 3320 White Oak at Arlington on Monday.

In the Heights. Hopefully, their empire will become successful enough to expand beyond the Loop.
