I don't care what they are serving, what restaurant it is, etc. I personally won't wait more than half an hour to be seated at ANY restaurant. If it's a popular 5-star place I'll make reservations, and if they screw that up they'll never see me again. I don't have an inflated sense of self-importance, there's too many places in Houston to go to and all are competing for my dollars. There's always one that I don't have to wait to be seated. If I were that kid I'd have gone elsewhere after 45 minutes, no way I'd have been there for 3 hours.
No mention of the cooking method used for EB's burgers, are they char-broiled or griddle-seared? Seems sacreligious to me for a gourmet burger place to griddle cook a burger.
My favorite go-to has been and still is Bellaire Broiler Burger at the "triangle" where Chimney Rock and Bissonnet meets Bellaire. No pretenses here, just an honest char-broiled burger like you'd cook on your own backyard grill. Support the local economy and give this family-owned/operated burger joint a try.
Pollo Poretti, my favorite. Used to go to the River Oaks location that was on W. Gray, on Monday nights the Robbie Renfroe big band would perform. Good times. Also used to visit the Greenspoint location before urban blight killed the area completely. Can't rememebr ever having a bad meal there.

I used to be a regular at the Gringo's location in Stafford many years ago, never had bad meal or service there.
Visited the Bellaire location years ago. Food was okay, service was prompt. Bring cash, they don't take credit/debit cards.
